Tonight’s chicken dinner. Mark used crushed pork rinds for breading and fried the nuggets in lard. The side is cheesy cauliflower. Microwave a steamer bag of riced cauliflower, mix in grated cheddar cheese and sour cream, put in a baker and top with a little more cheese and butter. Bake til melty.
Not pictured is the “honey” mustard dip. I make a batch of honey mustard dressing for salads and dipping almost every week. It’s a cup of mayo; 1 Tbls each of cider vinegar, yellow mustard, and dijon mustard; a good squeeze of lemon juice; and 3-4 Tbls swerve to taste. We love it and I could eat it with a spoon!
We are not on a diet. We’re eating awesome food, losing weight, and reversing diabetes. When someone says they can’t give up bread, I say of course as long as it makes you happy. But if you ever find yourself sick and tired of being sick and tired, think about going low carb high fat keto with us. I promise there’s so much good food beyond bread!
