Pizza Cups

These are an easy way to make individual portions of a crustless version of pizza.  Grease a muffin tin and set the oven to 350 degrees.  You’ll need 12 slices of pepperoni from the deli.  Those are a little bigger in diameter and they’ll fill the cup better.  Cut four small slits into the sides of each pepperoni slice and smoosh them down into the muffin tin cups. That’s the base.

Brown 8 ounces of ground beef with onion, garlic, and Italian seasonings.  Spoon evenly into  each muffin cup.  Top with a tablespoon of Rao’s marinara sauce (or whatever sugar-free sauce you like). Add a layer shredded mozzarella cheese, I used eight ounces. Top with a sliced jalepeno or a mushroom or a black olive, or another pizza topping you like.

Bake for about 15 minutes until bubbly and the edges are slightly browned.  When I entered this recipe into myfitnesspal, I got 1 carb, 20 protein, and 14 fat for each cup.  Be sure to enter your own ingredients into your tracker so that you have an accurate count.
